So, one thing I pride myself on is that I am creative. Every year I take pound cake and transform it into a cool creation my children dream up. This year, for my son's 9th birthday he requested a "Minecraft" birthday cake. Ok, this was going to be a challenge... a "Creeper" he wanted... ok. This year was going to be pretty easy because he wanted a Laser tag party and the hostess would be setting up and cleaning everything! So the cake could take the bulk of the extra time... it would be worth it! The cake: I bought 2 packages of pound cake mix and bake according to the directions for 2 9x13 cake pans. Frosting: Basic Buttercream 1 cup butter 1 cup butter flavored Crisco 1/2 cup heavy cream 2 tsp Cream cheese flavoring 8 cups confectioners sugar Whip until smooth. When the cake itself is cool, Cut into a rectangle and a square and a smaller rectangle for the feet. Cover with the frosting. To make Green Fondant 1/4 cup butter flavored crisco 1 (16 ounce) package miniature marshmallows 1/8 cup water 1 tbl green food color paste 1 teaspoon vanilla extract 2 pounds confectioners' sugar, divided Place the marshmallows in a large microwave-safe bowl, with the water and vanilla extract, coloring into the marshmallows, microwave 30 second intervals sturing until melted. Slowly beat in the confectioners' sugar, a cup at a time, until you have a sticky dough. Reserve 1 cup of powdered sugar for kneading. The dough will be very stiff. Rub your hands thoroughly with butter, and begin kneading the sticky dough. Turn the dough out onto a working surface dusted with confectioners' sugar and continue kneading until the fondant is smooth and no longer sticky to the touch, 5 to 10 minutes. Form the fondant into a ball, wrap in plastic wrap, and refrigerate overnight. To use, allow the fondant to come to room temperature, and roll it out onto a flat surface dusted with confectioners' sugar. Transfer fondant to cake and shape. Repeat steps for fondant using black coloring in place of green! Enjoy! |
