Hosting a Super Bowl Party and looking for a healthy option to go along with your wings and nachos? This Greek Salad is perfect for guests on a diet, can be vegan friendly and just tastes absolutely wonderful!
For dressing:
1/2 cup fresh squeezed lemon juice
1/4 cup red wine vinegar
1 cup olive oil
4 cloves garlic
1 1/2 tsp dried oregano
1/2 tsp of dried thyme
pinch of salt and fresh ground pepper
For Salad:
1 pint of grape tomatoes ,halved
2 english cucumber, seeded and diced
2 (15-ounce) can garbanzo beans (chickpeas), rinsed and drained
1/2 red onion, diced
3/4 cup Kalamata olives, pitted, halved
1 cup fresh mint
1 cup fresh basil
1 cup fresh parsley
2/3 cup crumbled feta cheese (optional)
Combine all veggies in a glass bowl (important because this looks so darn pretty! ) For dressing combine in a blender and when combined, add to your veggies. Let sit in fridge for 30 minutes.
