My daughter, Paloma who will be six next week is in a constant battle with us to eat well. We want her to eat fruits, veggies… essentially anything that isn’t a cracker or doesn’t come out of a box!!! So lately with lent I have been trying to convince her that Mermaids ALSO eat fish! We started with Salmon, which she liked and last night I made this tilapia, which is an inexpensive firm fish which the little princess LOVED! She not only loved it the child asked me for seconds!!!!!!!!!!
You’ll need:
3 Fillets of Tilapia
¼ cup mayo or salad dressing mayo
¼ cup Parmesan cheese
¼ cup breadcrumbs
1 tbl Old Bay seasoning
Prepare your cookie sheet with either parchment or spray. In a bowl mix together the cheese, crumbs and seasoning. Spread a thin layer of mayo over the tilapia and dredge them in the parm mix. Place on the cookie sheet. Bake 425° for 10-15 minutes or until fish flakes easily
