So when your Dad comes to visit to cut down a tree with your husband around Halloween … in the rain, what do you feed these lumberjacks? It better be hearty! What is heartier then Jalapeno poppers (one of my husband’s favorite things I make!) So I turned this into a soup!
Jalapeno Popper Soup
Ingredients
Cook the bacon in your saucepan until add jalapenos and let soften for 5-7 minutes. Add cream cheese. When melted combine. Add cheeses. Let melt completely, add cream, broth and salsa verde. Season with salt and pepper to taste. To thicken, add the optional flour and a bit of water in a small cup stirring until smooth. Add to pot. Remove from heat and serve garnished with some more chopped bacon on top.
PS: the tree was successfully cut down, fell away from the house and no one was hurt! (was not surprised since my father cleared 3.65 acres of land for our house he built himself for us when I was a kid! My husband however was new to tree cutting since the largest thing he cut down as a kid growing up in Phoenix AZ was a Saguaro cactus! He did a great job though!

- 8 slices raw bacon, diced
- 8 oz cream cheese
- 1 cup heavy cream
- 1 container chicken broth
- 3 Tbl salsa verde
- 1 tsp garlic powder
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterrey jack cheese
- 5 large jalapeno peppers de-seeded and diced.
- 1 tbl flour (can use Xanthan Gum if Gluten free just use a bit less!)
